I already had the armor, stored in a chest in one of my houses. I went there, had a look and sure enough my set was now unenchanted. I'm now working on choosing my new enchantments for each piece. Enchant skill and dual enchantment perk is going to provide some extra fun.

You may possibly know about this, but there is a "jail glitch" that lets you wear two types of equipment simultaneously. It's a broken glitch, but you can exploit it to make it fair and fit the enchantments and appearance you want.
I only suggest doing it with rings and necklaces because that way you get the enchantments you want without the unfair increase in armor rating. Also, if you were hypothetically wearing an ebony helmet and nightingale hood at the same time, it would show you wearing an ebony helmet every other save reload. Thank you.

The Nightingale Armor does have 3 levelled variants, so if you're a higher level when you receive it, you'll get the stronger version. It's already enchanted, so no. But you can disenchant it. If you want, you might be able to spawn in a set of unenchanted Nightingale Armor if you really like the set. Deathbrand Armor is arguably the best armor in the game — certainly if you don't have max-level Smithing and Enchanting skills.
